Our cheese is supplied to the U.S. through renowned London based cheese wholesaler Neals Yard Dairy. For the uninitiated they are a fantastic wholesaler of artisan British and Irish cheese. They select what they consider to be the finest cheeses in the land and sell them to the most prestigious cheese shops and restaurants in England, Continental Europe and the US. Owner Randolph Hodgson, comes to the farm several times a year. He selects batches of cheese that he particularly likes, which we then mature on for 24-30 months, which is much longer than is usual for us – a typical age would be 15-18 months. The cheeses he selects tend to have a wonderful rich and complex depth with either a lovely sweet nutty flavour (summer cheese) or a slightly more savoury almost meaty flavour.
